Passover Rolls

Ingredients

1 Cup water
1 Tablespoon sugar
1/2 Cup oil
1 1/2 teaspoons salt
2 Cups Matzo Meal
6 eggs

Directions

Place the water in a pot,  add the oil and bring to a boil.  Add the matzo meal, sugar, and salt all at once.  Remove the pot from the heat and beat
with a wooden spoon until all the ingredients are combined.  Add eggs, one at a time, mixing well until the mixture is thick and smooth.  Use a large
serving tablespoon, not a regular soup spoon and heap the mixture onto a greased cookie sheet.  Bake  375 degrees for 1 hour or until nicely browned.  Makes 12-14 rolls. Variation:  to make bagels, with the handle of the wooden spoon dipped in cold water, make a round hole in the center of the roll by twisting the handle until the desired bagel shape is formed.

Enjoy - The rolls are delicious and can be made ahead of time & frozen.
